Saccharin sodium, also called saccharin and chemically known as sodium 1,3-disulfonylbenzamide, appears as white prismatic crystals. It has a molecular weight of 205.17 and melts between 226-231°C. This compound is odorless or slightly fragrant and has a distinctly sweet yet bitter taste. When exposed to air, it gradually loses about half of its water of crystallization, turning into a white powder. Its diluted aqueous solution is roughly 300-500 times sweeter than table sugar, with a sweetness threshold around 0.00048%. It dissolves easily in water and is slightly soluble in ethanol. Compared to saccharin, it shows better thermal stability in aqueous solutions, remaining unchanged after heating at 100°C for 2 hours. However, its sweetness diminishes slowly over extended storage. Mainly used as an edible sweetener, it is not broken down in the human body and is excreted via urine without providing nutritional value. It is manufactured from phthalic anhydride or toluene.
