In its application as a food additive, glycerol is most widely used in bread, biscuits, and pastries, followed by the production of cream, butter, and ice cream. In pharmaceuticals, it is used as an excipient in the formulation of neutral ointments; in daily chemical products, it is used in the formulation of face cream, ice cream, and clam oil. It is also used as a solvent for oils and waxes, a hygroscopic powder protectant, and an opaque opaque agent. Glycerol reacts with fatty acids to form glycerol fatty acid esters, which include monoesters, diesters, and trimers. Triesters are fats and oils and have no emulsifying ability. Generally, a mixture of monoesters and diesters can be used, or a product with a monoester content of approximately 90% can be obtained through distillation and purification. The fatty acids used can be stearic acid, palmitic acid, myristic acid, oleic acid, linoleic acid, etc. However, in most cases, a mixture of fatty acids with stearic acid as the main component is used.
