Sodium copper chlorophyllin is produced from natural green plant materials such as silkworm excrement, clover, alfalfa, bamboo, and similar leafy plants. These raw materials are extracted using organic solvents including acetone, methanol, ethanol, and petroleum ether. During processing, the central magnesium ion in chlorophyll is substituted with a copper ion, followed by alkaline saponification to remove methyl and phytol groups, converting them into carboxyl groups and forming a disodium salt. As a result, sodium copper chlorophyllin is categorized as a semi-synthetic pigment. Other pigments with comparable structures and manufacturing methods include sodium iron chlorophyllin and sodium zinc chlorophyllin.
