Dimethyl dicarbonate (DMDC), also known as Vigorin, is a fruit juice beverage preservative approved under national food additive standards (INS No. 242).
At room temperature and even under low-temperature conditions, DMDC demonstrates strong antimicrobial activity against a wide range of contaminating bacteria commonly found in fruit juice beverages. Its preservative action is closely associated with its ability to modify and inactivate key enzyme proteins within microbial cells, thereby effectively preventing spoilage.
