Fine Chemical Intermediate: As a key intermediate in the production of fine chemicals, fumaric acid is crucial for manufacturing high-quality derivatives like those of maleic anhydride.
Fumaric acid is a key organic chemical raw material and an important intermediate in the production of fine chemicals. It is also a significant derivative of maleic anhydride and is widely utilized in industries such as food, coatings, resins, and plasticizers. In the food sector, it serves as a souring agent in products like soft drinks, fruit juices, western-style wines, canned fruits, pickles, and ice cream. Additionally, when used as an agent for solid beverage gas production, it enhances bubble durability and contributes to a fine product texture.

Fumaric acid is a non-hygroscopic, strong acid with low solubility. It dissolves at a rate of 0.63 g per 100 ml of distilled water at 25°C. While it dissolves slowly in cold water, its solubility improves when mixed with dioctyl sodium sulfosuccinate. Additionally, reducing the particle size increases its solubility. A quantity of 0.317 kg of fumaric acid can replace 0.453 kg of citric acid.
