Twain 80 is a synthetic non-ionic emulsifier extensively utilized in the cosmetics, food, and pharmaceutical industries. The manufacturing process involves alkaline catalysis, where ethylene oxide reacts with sorbitol fatty acid esters and sorbitan fatty acid esters. In this reaction, each mole of sorbitol or its corresponding sorbitan anhydride reacts with 20 moles of ethylene oxide. Originally developed by the American company ICI, "Twain" is the brand name ICI gave to this class of emulsifiers. Different product numbers, such as Twain 60 and Twain 80, are used to specify the fatty acids involved in the synthesis.
